GNOME is a good interface. They have very good touch support. It is also well polished, beautiful and easy to use. Has a good mix of flat and not flat design. It feelancery fluid.
If she isbised to macos, she will find it good.
The list is getting bigger and bigger. That is a good thing. But it now gets harder and harder to explore. More details on the list would help a lot.
